Having dismantled my previous layout I am debating whether to use DCC concepts stainless steel track or the new PECO code 75 bullhead track. If there is anybody using either of these how do you rate them and which one would you recommend. Ian Rice in his book on building trackwork recommends steel track.

With these changes you end up with a turnout where every piece of rail has a soldered track feed, and the short circuit problem has been eliminated. With the latest code 75 bullhead turnouts Peco have addressed these issues with their Unifrog solution. The frog is now very small, but made of metal and isolated.

Code 75 Finescale Peco Code 75 track is perfectly compatible with all current rolling stock used today. Code 75 shares all of the same technical specifications as Peco Code 100 track, including clearances though the frog area. The only difference between the two systems is the height of the rail.

Code 75 track (with a rail height of 0.075 inches) is far more accurate. If you scaled this up it would this time be 3% lower than the real thing. It's still not perfect, but it's much closer to the mark than Set Track. Codes 100 and 75 are the most common but there are other varieties:

The height of the rail is described as "code" and the size in thousands of an inch. In OO gauge, code 100 track is the original with a rail height of 0.1 inches. Although this has worked just fine in the past, the newer code 75 track with a rail height of just 0.075 inches is aesthetically much more appealing. There is still compromise involved.

Peco make a code 75/100 transition piece, SL-113. The code 75 track will need support slightly by a 'thin piece of plastikard'. I am not sure quite how thin but I am sure a sheet each of 10 & 20 thou will allow you experiment to raise it sufficiently.
